Salivary amylase digest starch into smaller molecules , ultimately yeilding maltose .
Firstly, it is secreted by parotid gland. It is the largest salivary gland. This gland is located posterior to the mandibular ramus and anterior to the posterior to the mastoid process of the temporal bone.
The pancreas also make amylase to hydrolyse deitary starch into disaccharides and tri saccharides.
