Fresh milk obtained from cows is not pasteurised and therefore has to be boiled to make it free from microbes. But when milk comes in packets, it has already undergone a process called pasteurisation. In this process, milk is heated at 72 Celsius for 15 seconds and then cooled down suddenly. Due to this difference in temperature, the microorganisms present in the milk become inactivated or dead and the milk becomes suitable for direct consumption.
