It is oxygen that causes most of the food to spoil, as most microbes require oxygen to live. Nitrogen is an inert gas and it has a quality to lower the pH and inhibit the growth of the bacteria. It replaces all the oxygen that causes the food to spoil. Therefore food remains safe for longer period.
