Why were only pigs' pancreas used to extract insulin ,earlier?

Earlier insulin was extracted from the pancreas of pigs and cattle. This is due to the reason that chemical structure of the insulin extracted from these animals is only slightly different than human insulin. Thus, this insulin functions efficiently in human body.
