Fermentation is a type of anaerobic reaction in which glucose is converted to acids, gases and alcohols in the absence of oxygen.
The fermentation of sugars into ethanol is a commercial process and is used in the manufacturing of beers and bread.
The pyruvate that is formed after glycolysis is converted to acetaldehyde by removal of one carbon. And then this acetaldehyde is reduced to form ethanol.

Ethanol fermentation is done by the yeast which is a unicellular fungi.
