Each taste bud has chemoreceptors that help in detecting different tastes. Food substances responsible for taste gets dissolved in the saliva, stimulates the chemoreceptors and generates impulses. These impulses then reach the brain through different nerves and determine which flavor (bitter, sour, sweet, salty, umami) is being consumed.
