The change of colour in stars is due to its composition and surface temperature. Stars surface mainly contains helium and hydrogen and many other elements. These elements burns to emit different electromagnetic wavelengths (variationintemperature). These different wavelengths gives different colours of stars. Like when a star is hotter it gives out blue colour and when it is old, it shows red colour.
