Our mouth has the salivary glands which secrete saliva. The saliva secretes an enzyme called salivary amyllase or ptyalin which not only moistens food but by changing the pH balance of the food into alkaline helps to break down starch into sugars, and with the muscular flipping action of the tongue helps to create a food bolus so it can be swallowed easily.
