  • Rennin helps in the digestion of milk protein casein. It is secreted in infants. It is present as a zymogen (inactive precursor of enzymes) in the stomach. In the presence of hydrochloric acid, pro-rennin is converted into rennin. By the action of rennin, casein breaks down to para-casein. Para-casein reacts with the calcium to form calcium para-caseinate. This is known as the curdling of milk.
