Enzymes are biocatalysts that enhance the rate of biochemical reactions. The enzymes are usually made up of proteins and need non-protein constituents called cofactors for their activity. Metal ions act as inorganic cofactors for several enzymes.
Zinc is a cofactor for the enzyme alcohol dehydrogenase as well as carbonic anhydrase. Alcohol dehydrogenase is an enzyme involved in alcoholic fermentation. Carbonic anhydrase helps in inter-conversion of carbon dioxide and water into carbonic acid, protons and bicarbonate ions.
