(i) The sodium bicarbonate is used as baking powder because it reacts with acidic components of dough and produces CO2. This is important for the leavening of the baking products.

(ii) The NaCl is used as a preservative in pickles and preserving fish because they extract all the moisture from these foods that prevents growth of bacteria.
