To separate salt from sea water the method employed is evaporation. Why not vaporisation?

Evaporation is a slow process that occurs at all temperatures and is a surface phenomenon. Vapourization is a rapid process that occurs at the boiling point of the solvent. In this case, solvent is water and process occurs at 100 oC.

For separation of salt from sea water, the sea water is kept in shallow beds for days till the water dries off. This is evaporation process and not vapourization.
