Evaporation is a slow process that occurs at all temperatures and is a surface phenomenon. Vapourization is a rapid process that occurs at the boiling point of the solvent. In this case, solvent is water and process occurs at 100 ^oC.

For separation of salt from sea water, the sea water is kept in shallow beds for days till the water dries off. This is evaporation process and not vapourization.
