When glycerol reacts with fatty acids, it forms glycerides. Glycerides can be monoglycerides (1 fatty acid + 1 glycerol), diglycerides (2 fatty acids + 1 glycerol) and triglycerides (3 fatty acids + 1 glycerol) based on the number of fatty acids that react with the glycerol molecule.
