Question

What are the hydrolysis products of

(i) Sucrose

(ii) What are the hydrolysis products of lactose?

Open in App
Solution

(i) Sucrose is dextorrotatory but after hydrolysis produces dextrototatory glucose and laevorotatory fructose.
C12H22O11+H2OInvertase−−−−−C6H12O6βDgalaclose+C6H12O6D()fructose
Since, the laevorotation of fructose (92.4) is more than dextroration of clucose (+52.5) the mixture is laevoratatory and it is known as invert sugar.

(ii) Lactose on hydrolysis produce \beta - D - galactose and βDglucose.
C12H22O11+H2OLactoseLactase−−−C6H12O6βDgalactose+C6H12O6βDglucose
