What causes plaster of Paris to harden when left undisturbed after mixing with water?

Chemical formula for plaster of Paris is $C a S O_{4}$ . $\frac{1}{2} H_{2} O$ . When it combines with water it gets converted into gypsum ie. $C a S O_{4} . 2 H_{2} O$ which is an ore of calcium and is hard in nature.
