What causes plaster of Paris to harden when left undisturbed after mixing with water?

Chemical formula for plaster of Paris is CaSO4.12 H2O. When it combines with water it gets converted into gypsum ie. CaSO4.2H2O which is an ore of calcium and is hard in nature.
