P in music stands for piano (not the instrument, but the dynamic), which means soft. Pianissimo is pp, which means very soft, and ppp means very very soft (pianississimo).
Piano is a dynamic just like forte (loud), which tells you how to play a piece of music.
This chart shows roughly how loud an instrument should be played when a specific dynamic has been asked for.
