What happens to salad brinjal of brinjal if it is exposed to air ? explain the reason.

Solution

Brinjal contains Iron as ferrous ion which is light green colour. When exposed to air the ferrous ions oxidized to ferric ions which are brown in colour. So the brinjal turns in to brown/black colour.
