When food materials containing fats and oils are left for a long time they become rancid and sour in taste.
Observable changes include:
1. Change in taste: food becomes acidic
2. Change in smell: bad smell
Ways to prevent rancidity:
i) Adding antioxidants which prevent oxidation.
ii) Keeping food in air tight containers.
iii) Flushing packed food with nitrogen gas.
iv) Keeping the food away from sunlight
