Vegetable oil is an unsaturated hydrocarbon, which can add hydrogen to itself over the double bond, in the presence of nickel catalyst, to give rise to a saturated hydrocarbon mass (vanaspati or ghee). this process is called hydrogenation.

Vegetable oil has lower melting point than the product form that is vanaspati ghee.

Nickel is used as a catalyst.
