When the raisins are kept in saturated sugar solution, the raisins shrink due to exosmosis. Since sugar is a hypertonic solution having less amount of water than raisins, it will result in the loss of water molecules from the raisins to the sugar solution through the process of osmosis which is the passage of water molecules from the region of higher water concentration to the region of lower water concentration. Hence raisins will get shrink.
