Proteins are complex biomolecules that comprise amino acid residues joined together by peptide bonds.
They are required for various biochemical, anatomical, physiological, and metabolic activities in the body.
Denaturation of proteins:
This refers to the disruption and degradation of the protein structure.
It occurs when the quaternary, tertiary, or secondary structure of proteins gets disrupted or destroyed and loses its configuration.
The peptide bond breaks leading to the collapse of the structure.
This results in a loose and random protein structure that is unable to perform its assigned function.
Protein denaturation occurs by heating, treatment with alkali or acid, vigorous shaking, etc.
Denaturation is an irreversible process.
Example: curdling of milk, boiling of egg, etc.
