Starch is a polysaccharide which is stored in plants. It consists of two components amylose and amylopectin. Amylose is water soluble and makes 15-20 % of starch. Amylopectin is insoluble in water and makes 80-85% of starch
Glycogen mainly resembles amylopectin in structure. Both glycogen and amylopectin are branched polymers of glucose but glycogen is highly branchedd than amylopectin. Glycogen chain consists of 10-14 glucose units whereas amylopectin chains consist of 20-25glucosee units.
