What is the disadvantages of not gowing crops in a field for many years

If there was no growing of crops in a field, there would be no ploughing of the field. This would left the field unfertile as there will be soil crumbs left, which will not allow the growth of any plant if grown. Another consequences could be that there will be no nutrients in the soil available to any plant for growth. Hence the soil become hard of the respective field.
