Stopwatches are used for sports events because stopwatch stops on the spot when required. As we know that sports are all about the timing, based on timing we give the positions. Any other clocks can't stops immediately as stopwatches can.

It is to get accurate timings with all those minutes, seconds and micro seconds. So that they will be able to select the winners with no doubt.
