When the cap of the bottle is removed, the pressure rapidly drops to 1 atmosphere and the liquid is left holding more dissolved gas than the equilibrium amount at this pressure. The liquid is momentarily supersaturated with gas. This gas begins to come out of solution and to form bubbles.
