It is because of rancidity. The fat and oil get oxidized when kept in open air and they give foul smell.
Eg. Softening of chips when kept in open.
Two methods to prevent or sllow down the changes are -
  1. By adding antioxidents like nitrogen
  2. By kepping such food in air tight containers.
