When quick lime is put in water why does the water starts boiling violently?

Because it's a exothermic reaction in which heat energy is evolved. Simply, when water is added to quicklime ( calcium oxide), a lot of heat energy is produced - That's why it starts boiling.

CaO + H2O. -----> Ca(OH)2 + heat( exothermic)
