Maltose:

  • Maltose is also known as malt sugar which is a disaccharide of two α-D Glucose units.
  • The two Glucose units are linked with a α-1,4glycosidic linkage.
  • At C1 of the Second Glucose unit aldehyde group can be formed in a solution, Thus maltose is a reducing sugar.

Production of maltose:

  1. The first discovery of Maltose was made by Augustun-Pierre Dubrunfaut but was not widely accepted.
  2. In the year 1872, the existence was confirmed by an Irish Scientist Named Cornelius O'Sullivan.
  3. Maltose is an important Biochemical series of glucose chains.
  4. Maltose can be prepared by the hydrolysis of Starch by the enzyme diastase.
  5. During hydrolysis, Starch is breakdown into two units of Glucose molecules.
  6. Starch is the most important saccharide in plant cells after cellulose
