Which method is better for recovering sugar from sugar solution, evaporation or crystallisation? Give the reason for your answer.

Crystallization is a unitary operation of chemical engineering consisting in isolating a product in the form of crystals. Crystallization is one of the most ancient physical operations practiced, with the evaporation of seawater to isolate salt. So, Crystallization is the better method for recovering sugar from sugar solution. It is because:

(1) When we recover sugar from sugar solution with evaporation process then some impurities will be there but by the crystallization process, no impurities will be there. It will be pure.

(2) We know sugar discompose due to heating. So, when we obtain sugar from water then there will be water molecules but some sugar molecules will be lost because sugar discomposes due to heating.

Hence proved Crystallization is the best method.
