The separation of white light occurs when the constituent colours of white light are bent at different angles. This can be observed in a triangular prism. The water droplets suspended in the sky can act like a prism and refract the sunlight at different angles too. This is also how a rainbow is formed. The bending is caused by the difference in the optical density of air and prism. As a result, the refracted ray bends towards the normal and lights of different colours get refracted at different angles.
This phenomenon is not possible in any kind of mirror, as refraction does not happen prominently in a mirror.
