Which of the following is soluble in water?
Maltose
Starch, cellulose, and chitin are big and complex carbohydrates that are insoluble in water. During the digestion process, complex carbohydrates are broken down into simpler ones. For example, starch is partially broken down into maltose by salivary enzymes called amylases. Later, in the intestines, maltose is broken down into glucose (the simplest sugar). Simple sugars like maltose and glucose are usually soluble in water.
