Solution

The correct option is C Saccharomyces
Beer and bread formation :
Beer and bread are the products which require the process of alcohol fermentation carried out by yeasts. The commonly used yeast for this process is Saccharomyces.

Mechanism of alcohol fermentation :
Yeast produce enzymes like pyruvate decarboxylase and alcohol dehydrogenase that convert glucose into ethanol and carbon dioxide.
The steps in ethanol fermentation are as follows:

Utility of the products
  • In beer making, the ethanol produced at the end of fermentation is suitably processed to form beer.
  • In bread making, after alcohol fermentation of the dough, it is baked. The carbon dioxide that is trapped escapes because of the heat, giving the bread porosity.
Final answer
(C) Saccharomyces
