When a chalk stick is dipped in the ink the surface retains the colour of ink due to adsorption of coloured molecules while solvent of the ink goes dipper into stick due to absorption but the colour is only present on surface, so, the inside of stick remains white so when chalk is dipped in an ink solution, both adsorption and absorption takes place.

Adsorption is a surface phenomenon and absorption is a bulk phenomenon.
