Starch is a polymer of α-glucose. Starch is made up of amylose and amylopectin. Amylocpectin is a branched chain with several glucose residues joined by 1,4-glycosidic linkages and at branching is by 1,6-glycosidic linkages. Successive glucose units are linked together by α 14 linkage and at branching α 16 linkage is present. Both amylose and amylopectin have α-D-glucose as their monomer units. Iodine turns blue-black on reacting with starch.
