Mutarotation is the phenomena of rotation of the plane of polarized light. Laevorotatory monosaccharide are those which can rotate the the plane of a polarized light ray towards anticlock direction. Fructose is a monosaccharide with five carbon atom. It is the sweetest sugar. It is mainly found in fruits, nuts and vegetables. It combines with glucose to form sucrose. When the fructose solution is placed in the polarizer, it rotates the plane of polarized light towards left.
