Fibrillar protein exists in the form of large rod shape fibre. It is an insoluble structural protein such as keratin, collagen etc. Albumin is an egg protein which is globular in structure with polar groups placed at the protein surface. It is made up of 585 amino acids and 17 amino acids. It is spherical in shape. It is characterized by twisted and folded amino acid chain to increase the protein's solubility in water by placing polar groups of atoms at the protein's surface. The polar groups can interact with the neighbouring water molecules which further increase the water solubility. The greater water solubility is due to inter-molecular interaction while the globular structure is due to the intramolecular interaction between the amino acids.
