Carthamus tinctorius, commonly known as Safflower is a highly branched, herbaceous, thistle-like annual plant. It is commercially cultivated for vegetable oil extracted from the seeds. Plants are tall with globular flower heads having yellow, orange or red flowers. Safflower seed oil is flavourless and colourless and is nutritionally similar to sunflower oil. It is used in cosmetics, cooking and salad dressing. Dried safflowers are used as a natural dye source and it yields orange dye from petals and it is used as a cheaper substitute to saffron.
