The first part of the Small intestine called the duodenal sector receives Bile from the liver, which is normally stored in the gall bladder. It performs two functions, i.e., makes the food alkaline as bile salts contain Sodium bicarbonate NaHCO3 and break the fats present in food into small globules by the process of emulsification which involves the breaking up of fat globules into much smaller emulsion droplets. Emulsification greatly increases the surface area where water-soluble pancreatic lipase a pancreatic enzyme further works to digest TAG ( triacylglycerol ).
