While the deriving the mirror formula we use all the narrative anf positive signs accordingly then while using tye formula why do we need to use the signs again?

Sign convention is used just to make the problms easier and understandable ,

Theres no restrictions on you while choosing sign conventions You can choose your own conventions but be careful while using them.
