Plants store food in their roots to survive through out the year.
During winter, days are short, photosynthesis is slow, respiration is slow, and the growth stops. The plants drop their leaves or completely dry up their parts which are above the ground. Since they need to have sufficient food to grow again during the spring season, they store their food in the parts below the ground, which are the roots.
Carrot is an example. In the first summer, it produces and stores its food in its tap roots. In winter, the leaves dry up. In the second summer, this stored food is utilized to grow flowers and seeds. This is how these plants survive.
