Cause of bread or idly dough rise:

  1. Yeast is used as a leavening agent in the preparation of bread and idlis.
  2. In dough ,yeast converts sugars into carbon dioxide and derives energy from the process.
  3. As a result, yeast cells multiply and the dough expands.
  4. When such dough is baked, the air pockets formed by carbon dioxide give bread and idli a soft and spongy texture.
  5. Carbon dioxide plays a primary role in making the dough rise, softer and fluffier.
  6. It creates numerous pores in fermented doughs because the carbon dioxide is trapped inside.
  7. That is why the bubbles appear to have risen during baking.
