Why do farmers dry the paddy crop after cutting them from fields?

Paddy crop is the one which is grown on a paddy field. It is a flooded land used for growing semiaquatic rice. They are dried after harvesting which is a very important step. Drying is the process which lowers the grain moisture content to a level suitable for storage. A delay in drying or incomplete drying lowers grain quality. It also supports fungal growth. This will result in spoilage of crop and ultimately financial loss.
