why do man made material like plastic persist for a long time in our environment?

Plastics are made up of very small units but very strong bonds. These bonds are not easily broken by microorganisms and hence do not decompose or degrade in the environment into simpler units. Hence, plastics are called non-biodegradable and persist in environment for long time.
