Why do soda acid fire extinguisher contains sodium hydrogen carbonate.

Soda acid fire extinguisher consists of sodium hydrogen carbonate (sodium bicarbonate) and an acid. Initially tartaric acid was used. Later on sulfuric acid was used. The reaction of sodium bicarbonate and acid produces a fountain of carbon dioxide with great pressure which extinguishes the fire.
