Reason out : 2 Marks

Water creates a hypotonic environment for the plant cells. Hence to maintain parity of water concentration with the outside environment and to avoid plasmolysis, these plant cells actively take up water. Thus, entry of water molecules into the plant cells leads to turgidity of cells resulting in vegetables looking crisp and fresh.This is the reason why subzi- walla sprinkles water on the vegetables regularly.
