Why do we prefer to cook food in utensils made up of steel, copper, aluminum?

Steel,copper,aluminium are thermal conductors.This means that they can withstand various range to temperature and so they are not affected by high temperature.So that they can be utilised for cooking.

But plastic vessels can't be used because they are not thermally conducting.High temperatures cause them to melt and so that they are not fit for cooking.
