Why does a bread piece taste sweeter, when you chew it?

  1. This happens because the bread is a source of carbohydrates, and when we chew it the carbohydrate in the form of starch is converted to maltose by the action of an enzyme salivary amylase.
  2. This conversion resulting in the formation of maltose is why bread tastes sweet on chewing. Maltose is sweet in taste and hence we get a sweet taste while chewing bread.
