Why does the water left out in a mud pot becomes cool after some time?

Mud pots have small pores in their walls through which water keeps seeping out. This water then evaporates into the atmosphere taking heat from the pot. The heat loss from the pot enables the water inside the pot to cool down. As more and more water evaporates, the water inside loses more heat and remains cool.
