Why H3PO4 is triprotic acid but H3PO3 is diprotic acid?

Due to more electronegativity difference between H and O, the H atom attached to O atom is released when the acid is dissolved in water.
H3PO3 has 2POH bonds while H3PO4 has 3POH bonds.
Hence H3PO4 is triprotic acid but H3PO3 is diprotic acid.
